Cottage Cheese Stuffed Eggs

Cottage Cheese Stuffed Eggs

2 hard boiled eggs, chilled for at least an hour

4 tsp salsa

2 tbsp low-fat cottage cheese

Rosemary & ground black pepper to garnish

1. Peel off shells & cut into half. Discard yolks!

2. Fill each egg half with 1/2 tablespoon of cottage cheese & 1 teaspoon of salsa

3. Sprinkle with herbs to taste.

Optional: serve with a whole grain crispbread such a Ryvita.
